Chocolate Peppermint Sandwich Cookie's #foodietuesday

Good morning y'all! How is everyone's week going so far? I've actually got a lot done so far this week and that's thanks to the Skinny Brew coffee I drink every morning (message me to learn more)! I am a coffee addict...first I have the coffee then I do the things.


Now that everyone has some coffee let's talk about dessert. I love dessert. In my opinion it is the best part of any meal! This week I decided to make one of the box mixes I had from Christmas because I bought a handful of different ones when I thought I would have to make cookies for him to take to work and instead they catered and I got stuck with cookies to make. Which isn't a bad thing! I made Chocolate Peppermint Cookie's this week and they were delicious! See the picture below for the ingredients.



First I preheated the oven to 350. Then I mixed together 4 Tbsp of room temperature unsalted butter (my preference when baking), 1 egg and the chocolate cookie mix.





After mixing that together I started forming the dough into balls and placing them on the baking pan and smashing them a little with the palm of my hand. I got 18 out of this which is what the directions said. I've had some that made less than what the directions claimed they would make.


I then put them in the oven for 10 min and let me just say that at this point I really just wanted to eat the cookies lol. I love a good chocolate cookie!

It took so much self control to not touch these as I was making dinner and just let them cool! Next up I creamed the butter and then added the powdered sugar and filling mix and beat it till it was just combined. Then I slowly added the 1 Tbsp of milk and had to add just a little more to get the right consistency.


Once the filling was made I spread some filling on one side of a cookie and sandwiched another on top and rolled the edges in crushed up candy canes!



Do these not look so good?! I think the only complaint was that it did have a little bit of a raspberry taste to it as well which I liked. Not sure if it was supposed to have a raspberry taste mixed with the peppermint but they were still really good. I still prefer to make desserts from scratch but box mixes come in handy when you don't have the time or energy to make it from scratch.
