Good morning y'all! I hope everyone has had a great couple of weeks. Sorry I've been MIA but I had family visiting and then a flare up but I'm back with this amazing delicious recipe that you all have got to try. First let me refill my coffee! Checkout my new mug I found at Marshall's 🧡
As you guys know I love pumpkin and baking with it. I came across these cookies a few years ago and I'm finally getting around to making them and let me tell you they are so amazing! Let's check out what you need to make these:
1/2 cup unsalted butter
1/4 cup packed light or dark brown sugar
1 cup granulated sugar, divided
1 teaspoon pure vanilla extract
6 Tablespoons pumpkin puree
1 and 1/2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons ground cinnamon, divided
1 teaspoon pumpkin pie spice
1/2 cup white chocolate chips or chunks
1) Melt butter in microwave. In a bowl whisk the melted butter, brown sugar and 1/2 cup sugar until no brown sugar lumps remain. Then mix in the pumpkin and vanilla until smooth.
2) In a bowl mix together the flour, baking soda, baking powder, salt, 1 and 1/2 tsp cinnamon and the pumpkin pie spice.
3) Next pour the wet ingredients into the dry ingredients and mix together. The dough will be very soft. Fold in the white chocolate chips. Cover the dough and refrigerate for at least 30 minutes. (Chilling is a must)
4) Take the dough out of fridge and preheat the oven to 350°. Line a baking sheet with parchment paper.
5) Roll the dough (or use a scoop) into 1 and 1/2 Tbs balls. Next mix together the 1/2 cup sugar and 1/2 tsp cinnamon and roll the dough balls in it. Slightly flatten the dough balls because they won't spread much in the oven.
6) Bake for 11-12 minutes or until the edges are set. The cookies will look soft in the middle. Remove from the oven and let cool for at least 10 minutes before transferring to a cooling rack.
You guys these didn't even last 2 days in my house! Here's a secret for you, these are even better the second day. The flavor is much more prominent and its even more chewy! I can't wait for y'all to give them a try!
